Andhra Meals (Bhojanam)

The full banana-leaf spread: rice with a parade of pappu (dal), a dry curry, a pulusu or sambar, rasam, a pachadi or two, podi with ghee, pappu chaaru, curd and pickle — eaten in a fixed order and topped up until you surrender. Unlimited 'meals' restaurants are an institution in every town.

Gongura Pachadi

The sour red sorrel leaf — Andhra's signature green — pounded with red chillies, garlic and tempered spices into a chutney that defines the state's palate. Gongura mutton and gongura chicken are the same leaf's non-vegetarian afterlife.

Avakaya

The mango pickle every Telugu household makes in May: raw mango cubes cured in mustard powder, red chilli powder, salt and sesame oil, aged in ceramic jars for a year of lunches. Godavari-district avakaya, made with the local Banginapalli and Collector mangoes, is prized.

Ulavacharu

Horse-gram soup slow-cooked for hours until it is dark, thick and tangy, served with rice and a spoon of fresh cream. A Krishna-district speciality that has gone from village kitchens to bottled brands.

Nellore Chepala Pulusu

Nellore's fish curry — river fish in a tamarind-and-chilli gravy cooked in a clay pot and left to rest so the flavours deepen. It is best the next day, and the town's restaurants argue over whose is best.

Pulasa

Hilsa that swims up the Godavari during the monsoon floods (July–September) is called pulasa, and Godavari people pay extraordinary prices for it. Cooked as a pulusu with tamarind and left overnight, it is the most celebrated seasonal dish in the state.

Where should I go this weekend from Guntur?
Suryalanka beach is 90 minutes away for an easy evening; for an overnight, Gandikota's gorge (4.5 hrs) or the Konaseema backwaters (3 hrs) are the two I'd pick this season…
